Prosciutto Grilled Cheese with Honey + Gorgonzola

It’s another Cozy Mystery Cooking Club recipe! This prosciutto grilled cheese with honey and gorgonzola is a perfect fit for this month’s cozy mystery pick!
Have you ever thought, “Gee, I’d really love a charcuterie board right now, but like, in sandwich form”?
Well then- have I got the perfect sandwich for you today!
This grilled cheese sandwich has prosciutto, cheddar AND gorgonzola cheese, honey, and bread in it. So basically, a mini charcuterie board!
It’s a recipe inspired by this month’s Cozy Mystery Cooking Club read- Up to No Gouda by Linda Reilly.
This cozy mystery pick was, I think, solely self-serving…Linda (my co-host from Sip + Sanity) and I just wanted to eat grilled cheeses all month! And it was totally worth it.
Not only was the book SO good- one of my favorite cozies for sure now- but the grilled cheese recipes we’re sharing are delicious. In my humble opinion of course!
Prosciutto, cheddar, gorgonzola, and honey…layered together between bread and grilled, to create a sandwich from heaven.

Prosciutto, Honey + Gorgonzola Grilled Cheese
Ingredients You’ll Need For This Grilled Cheese Sandwich:
As the title suggests, you’ll need:
- 2 slices of prosciutto (about .9 oz.)
- 3 slices cheddar cheese (about 2 oz.)
- 1/2 oz. Gorgonzola cheese crumbles (about 1 1/2 tbsp)
- 3/4 tbsp hot honey (or regular)
Plus: 2 slices of bread (I used a favorite pumpernickel) and a pat of softened butter.
I used pumpernickel bread, because I like the flavor, but you can really use any favorite bread here.
For the prosciutto, I just picked up a small pack from my grocery store. You can buy your favorite, or you can sub something similar if you can’t find it…perhaps a couple slices of bacon or ham!
For the cheddar, I like to use those square orange slices you can commonly find in the dairy section of the store. But again, you can use any cheddar you’d like. Keep in mind that this sandwich already has a salty feel with the gorgonzola and prosciutto, so stay away from overly salty cheeses when choosing your cheddar.
The hot honey can be substituted out for regular honey! I just like the little kick of the hot honey. Using honey, whatever kind you like, helps to cut through the saltiness of the meat and cheese.
I like to add anywhere from 1/2 tbsp to 1 tbsp, depending on taste. You don’t really need to measure this if you don’t want to…just add a good drizzle all over the top of the cheese!
Equipment Needed For This Prosciutto Grilled Cheese with Honey + Gorgonzola:
You’ll need a knife to butter the bread and cut the sandwich after it’s cooked. A food scale is helpful, but you can also eyeball or use a tablespoon for most of the ingredients.
A small pan is essential, for cooking the sandwich on the stove. If you have a cover for the pan, that’s useful. Covering the sandwich while it cooks on each side will help melt the cheese more quickly, which lessens the chance that you’ll end up with burnt bread before that happens!
And finally, a cutting board. Makes it easy to assemble and cut the sandwich!
Yes! If you’re not a fan of gorgonzola you can either leave it out or substitute something else. It provides a nice tang and sharpness, but you can leave it out and add an extra slice of cheddar or you can substitute it with another blue cheese. A goat cheese would also be a good option!
If you can’t find it or simply don’t like it, you could substitute the prosciutto with something similar, like a few slices of bacon or thin ham. If you want to leave it out all together, you can do that too and just have a cheese and honey sandwich (still delicious!).
Sure thing! You can make as many sandwiches as your heart desires. I would suggest crisping the prosciutto for all the sandwiches first. Then assemble them all as described in the recipe. Then you can cook them, all at once or as many as possible, in a pan or griddle on the stove.
It’s hard to go wrong with a grilled cheese sandwich (…which may or may not have been a factor in us choosing this theme for May’s cozy mystery haha!). And this prosciutto grilled cheese with honey and gorgonzola is a definite new favorite of mine.

Prosciutto Grilled Cheese with Honey + Gorgonzola
Ingredients
- 2 slices of bread I used pumpernickel, but you can really use any bread
- Pat of softened butter
- 2 slices of prosciutto about .9 oz.
- 3 slices of cheddar cheese about 2 oz.
- 1/2 oz. Gorgonzola cheese crumbles about 1 1/2 tbsp
- 3/4 tbsp hot honey or regular
Instructions
- Spread the softened butter on one side of each of the bread slices.
- In a small pan, lay the slices of prosciutto flat and turn the heat on to medium-low. Cook the prosciutto, flipping the slices every so often for a few minutes until they’ve crisped up a bit.
- Set aside the crisped prosciutto and wipe out the pan. On a cutting board, place one slice of bread, butter side down. Top the bread with the prosciutto, kind of folded/crinkled up. Place the slices of cheddar on top of the prosciutto, and then the gorgonzola. Make sure to spread the gorgonzola out evenly over the cheddar.
- Add the honey- drizzle it over the cheeses evenly across the sandwich. Top with the other slice of bread, butter side up and transfer the sandwich to the pan.
- Place the pan over medium-low heat, and cook the sandwich until the cheese is melted and the bread is toasted to satisfaction- about 5 minutes or so on each side. If you have a cover that fits your pan, you can cover the sandwich while it cooks, which will help melt the cheese more quickly, lessening the chance of burning the bread before the cheese melts.
- After cooking the sandwich on both sides, remove it to the cutting board and let it cool a minute. Then cut it in half and enjoy!
