Well, it’s November…and you know what that means right? Time for alllll the holiday food to come out! Starting with this recipe for broccoli cheese casserole.

This is a great side dish. And I mean great! When we first sat down to eat this, both my husband and I went wow, this is really good!

And we do NOT say that often about vegetables…

I guess you can’t really go wrong when you combine a vegetable with cheese. The cheese is everything. It’s love, it’s life, it’s delicious. Cheese is one of the greatest inventions of all time.

Oh yea yea yea, the recipe for broccoli cheese casserole that I’m bringing to you on this fine November day.

Broccoli and cheese go really well together, and this casserole is no exception! It’s got lightly steamed broccoli, mixed with a homemade cheese sauce, topped with breadcrumbs, and baked!

It makes a wonderful side dish for the holidays, or for just any day when you feel like plain ol’ vegetables just won’t cut it.

So how do I make it, you might ask? That is an excellent question my friend. Read on below to find out!

What Ingredients Do You Need?

For this broccoli cheese casserole, you’ll need the following:

  • 6 cups of chopped broccoli, in bite size pieces (about 2 medium heads of broccoli)
  • 2 tbsp unsalted butter
  • 2 tbsp all-purpose flour
  • 1 ½ cups milk (any kind)
  • 2 cups shredded cheddar cheese
  • ½ tsp salt
  • Ground pepper
  • ½ cup Panko breadcrumbs
  • 1 tbsp melted butter

Pretty straightforward! For the broccoli, it’s about 2 medium heads. Once you have chopped them, measure out the 6 cups you’ll need. If you have a little more than 6 cups, you can use it but try to make a little extra sauce then so the dish isn’t dry!

If you can’t find panko breadcrumbs, you can use regular. I just like the extra crunch from the panko!

What Equipment Do You Need?

You can use another casserole dish if you want! I just happen to like this size for the recipe.

If you want to make this ahead for the holidays, you can make it mostly the day before and then bake the day of! You can do this by going to the step where you pour the broccoli and cheese into the casserole dish. But don’t put the breadcrumbs on yet!

Store the cheesy broccoli in the casserole dish in the fridge until the next day, then add the buttered breadcrumbs and bake as usual.

I will definitely be making this recipe for broccoli cheese casserole many times this holiday season! I think it is probably our favorite vegetable side dish now.

Broccoli Cheese Casserole

Awesome side dish for the holidays! Broccoli and a homemade cheese sauce, topped with breadcrumbs and baked.

Ingredients

  • 6 cups of chopped broccoli in bite size pieces (about 2 medium heads of broccoli)
  • 2 tbsp unsalted butter
  • 2 tbsp all-purpose flour
  • 1 ½ cups milk any kind
  • 2 cups shredded cheddar cheese
  • ½ tsp salt
  • Ground pepper to taste
  • ½ cup Panko breadcrumbs regular is fine too
  • 1 tbsp melted butter

Instructions

  • Place broccoli in a microwave proof bowl and add 1 cup water. Cover if possible with a plate or microwavable cover. Microwave on high for 5 minutes.
  • Preheat the oven to 350 degrees Fahrenheit. Meanwhile, in a large skillet, melt the butter over medium heat and then add the flour. Whisk it together continuously for 1 minute. Slowly add in the milk, whisking to incorporate. Let cook and thicken, stirring frequently, for about 5 minutes.
  • Turn the heat off. Stir in the shredded cheese until melted. Add salt, pepper to taste.
  • Drain the broccoli when it’s done in the microwave. Add it to the cheese sauce and mix it up. Pour into an 8×10 casserole dish. Mix the breadcrumbs and melted butter together in small bowl, and sprinkle them over the top of the broccoli.
  • Bake at 350 degrees Fahrenheit for about 30 minutes, until broccoli is cooked through and the breadcrumbs are golden.
