Honey Crunch Ginger Granola Recipe with Almonds

This homemade ginger granola recipe is perfect for a cozy breakfast or snack! Delicious crunchy granola, with honey, crystallized ginger, and almonds.

Sometimes, I don’t feel like a muffin or oatmeal, or other baked good for breakfast. Yes it happens!

That’s when it’s time to pull out the granola! This granola is a perfectly crunchy, not too sweet but still delicious, cozy breakfast recipe.

Or snack, or even dessert! This granola recipe is that good. We devoured it, with yogurt, by itself, or with milk.

It’s still winter around here, and this granola, with it’s ginger and honey flavor is a perfect compliment to the weather. If you are a fan of ginger, I know you’ll love it too!

Crystallized ginger gives the granola a pop of spice, with sweetness from the honey. Complimentary cinnamon, nutmeg, and allspice make each bite of this granola a lovely spiced treat.

And it’s so crunchy! With clusters of oats and the sliced almonds, I think you’ll agree that the crunch on this ginger granola is perfect.

It’s so delicious for a cozy winter (or year round!) breakfast, snack, or dessert. Mix it with your favorite yogurt or milk, or simply sneak handfuls when you want a crunchy sweet snack!

How to Make Honey Crunch Ginger Granola Recipe

What Ingredients Do You Need?

To make the perfect ginger granola, you’ll need these ingredients:

  • 3 cups old fashioned rolled oats
  • 1 cup sliced almonds
  • ½ tsp ground cinnamon
  • ¼ tsp ground nutmeg
  • ¼ tsp ground allspice
  • Pinch of salt
  • ½ cup honey
  • 2 tbsp olive oil
  • 1 egg white
  • 1 tsp vanilla extract
  • ⅔ cup crystallized ginger, chopped into small pieces

I usually find crystallized or candied ginger in the produce department of my grocery store. I just chop it finely into small chunks. You can add more if you like than the recipe calls for, if you’re a huge ginger fan!

The egg white in this recipe is what helps it get so crunchy! I learned this trick a few years ago and now always add one to my homemade granolas.

Honey Crunch Ginger Granola Recipe with Almonds

Crunchy homemade granola with crystallized ginger, honey, and sliced almonds!

Ingredients

  • 3 cups old fashioned rolled oats
  • 1 cup sliced almonds
  • ½ tsp ground cinnamon
  • ¼ tsp ground nutmeg
  • ¼ tsp ground allspice
  • Pinch of salt
  • ½ cup honey
  • 2 tbsp olive oil
  • 1 egg white
  • 1 tsp vanilla extract
  • cup crystallized ginger chopped into small pieces

Instructions

  • Preheat the oven to 300 degrees Fahrenheit.
  • Whisk together the oats, almonds, spices, and salt in a large bowl. In a separate bowl, whisk together the honey, olive oil, egg white, and vanilla.
  • Pour the wet ingredients into the dry and stir with a spatula to coat well and until everything is combined together.
  • Line a baking sheet with parchment paper and spread the granola into an even layer on it. Bake for 25-30 minutes, stirring gently halfway through and re-flattening into an even layer. Start checking the granola around minute 25 to make sure it’s not over browning- the granola should be just golden brown when done.
  • Remove the granola from the oven and place the pan on a cooling rack. Sprinkle the chopped crystallized ginger over it. Let the granola cool completely before stirring/breaking it up into clumps and storing it. Store in an airtight container for 1-2 weeks, or transfer to the fridge or freezer for longer term storage.
