Easy White Chocolate Blackberry Jam Crumb Bars (small batch!)

You ever think to yourself, “man, I just really want something sweet! But what?!” Well, I’m here to tell you that these white chocolate blackberry jam crumb bars are your answer!
These easy blackberry bars make a small batch- but there’s still plenty to go around! 8 small bars, of sweet blackberry jam and white chocolate, and a most delicious crumb.
I think you’ll agree that these are for anyone with a sweet tooth, as they make a perfect little dessert to go with your after-dinner tea.
These crumb bars are easy to make too, which is a plus! They are a riff on my pumpkin crumb bars, but even easier.
The base crust and crumb topping are made from the same dough, and then it’s just blackberry jam and white chocolate chips!
It’s an easy peasy dessert, perfect for spring!

White Chocolate Blackberry Jam Crumb Bars
What ingredients do you need for these blackberry bars?
- ¾ cup all purpose flour
- ¼ cup oats
- ⅛ tsp salt
- ½ tsp baking powder
- ⅓ cup granulated sugar
- 6 tbsp of butter, cold and cut into small cubes
- ⅓ cup Blackberry jam or preserves
- ⅓ cup white chocolate chips
These jam crumb bars require pretty straightforward ingredients!
What equipment do you need for white chocolate blackberry jam crumb bars?
- oven
- 9×5 or similar size loaf pan
- parchment paper
- medium bowl
- measuring cups and spoons
- whisk
- pastry cutter (optional)
- cooling rack
The pastry cutter is certainly optional! You can just as easily use a fork or your fingers.
Helpful Tips:
Nope! If you aren’t a fan of white chocolate or just want to dial down the sweetness of the recipe, you can just leave the white chocolate out. If you want to try a different flavor combo- I bet strawberry jam with milk or dark chocolate would be really good!
You can! Blueberry would also be great. You could use strawberry or raspberry as well. If you plan on using the white chocolate as the recipe suggests, then just make sure your jam will go with that flavor.
You technically can, but keep in mind the texture will change. The bars may get a little more soft as you defrost them, so the texture won’t be as firm as they are freshly baked. For storage, I suggest storing the bars on your counter in a container for a couple of days. Otherwise, store in the fridge for up to a week.

White Chocolate Blackberry Jam Crumb Bars
Ingredients
For the Base and Topping:
- ¾ cup all purpose flour
- ¼ cup oats
- ⅛ tsp salt
- ½ tsp baking powder
- ⅓ cup granulated sugar
- 6 tbsp of butter cold and cut into small cubes
For the filling:
- ⅓ cup Blackberry jam or preserves
- ⅓ cup white chocolate chips
Instructions
- Preheat the oven to 350 degrees Fahrenheit. Line a 9×5 loaf pan with parchment paper, leaving a little overhang on the sides to help lift the bars out.
- Make the base and topping: Combine the flour, oats, salt, baking powder, and sugar in a medium bowl and whisk together. Add the cold butter cubes to the bowl, and work them in using a fork, a pastry cutter, or your fingers until you have a crumbly texture.
- Set aside about ⅓ of this mixture. Then take the remaining mixture and press it firmly into the bottom of your pan, to form a flat and even crust.
- Carefully spread the jam on top of the crust in the pan. Sprinkle the white chocolate chips evenly on top of the jam. Take the remaining crumb mixture you had set aside, and evenly sprinkle the crumbs on top of the jam and white chocolate chips.
- Bake in the preheated oven for 40-45 minutes, until the top is golden brown. It will seem very soft! Let them cool completely to firm up before cutting into bars. Enjoy!
