Easy Cranberry Orange French Toast Cups

Cranberry orange French toast cups are a fun way to do breakfast. Like individual French toast casseroles, these make a great holiday (or every day!) breakfast!

Ah, Christmas breakfast…the best breakfast of the year in my opinion! I look forward to Christmas breakfast all year long. I just can’t wait!

Now I don’t have to wait for a Christmassy breakfast- with these cranberry orange French toast cups, it’s like Christmas breakfast any time!

I love making these cups. I have a gluten-free cinnamon sugar version, and a pumpkin version.

So with Christmas coming around, I knew I wanted to do a Christmas version too! Cranberry and orange are perfect Christmas flavors, and some of my favorite! So this flavor of French toast cups was a shoo-in.

Of course this recipe works for all of winter too, not just Christmas! Or even all year round. I just happen to think they are perfect for a holiday breakfast.

Cranberry Orange French Toast Cups

What Ingredients Do You Need?

You will need the following:

  • 3 large eggs
  • ⅔ cup unsweetened almond milk (or milk of preference)
  • ½ cup honey
  • 2 tsp vanilla extract
  • Zest from one orange
  • Pinch salt
  • 1 cup cranberries, roughly chopped
  • 1 regular French baguette, (about 14-15 oz.) cut into ½ inch or so cubes *see notes for other bread options

For the topping:

  • 1 tbsp brown sugar
  • ½ tsp ground cinnamon
  • Zest from one orange

And powdered sugar or maple syrup for serving! (optional)

Pretty straightforward! You can also use regular milk or whatever milk of preference you have in place of the almond milk.

For the bread I like French bread, but you can use brioche or challah, or other sturdy bread. You can also use a sturdy, gluten-free bread similar to French bread type.

These cranberry orange French toast cups are perfect for holidays or regular weekday breakfasts! You can even make them ahead of time if you’d like. Just warm them up again for a few minutes in the oven or about 30 seconds each in the microwave.

Cranberry Orange French Toast Cups

French toast cups with orange zest and cranberries! A lovely breakfast option for special or weekday breakfasts!

Ingredients

  • 3 large eggs
  • cup unsweetened almond milk or milk of preference
  • ½ cup honey
  • 2 tsp vanilla extract
  • Zest from one orange
  • Pinch salt
  • 1 cup cranberries roughly chopped
  • 1 regular French baguette (about 14-15 oz.) cut into ½ inch or so cubes *see notes for other bread options

Topping:

  • 1 tbsp brown sugar
  • ½ tsp ground cinnamon
  • Zest from one orange

Powdered sugar and/or maple syrup for serving

    Instructions

    • Preheat the oven to 350 degrees Fahrenheit. Spray a muffin pan with non-stick spray.
    • Whisk together the eggs, milk, honey, vanilla, orange zest, and salt in a large mixing bowl. Add the cranberries and bread cubes and toss until the cubes are coated. If it seems a bit liquidy, let it sit for a few minutes to absorb extra liquid.
    • Fill the muffin tin cups with the soaked bread cubes, making sure to get cranberries in each. I got about 1/2 a cup of bread cubes in each muffin tin cavity, heaped up. You can pour any extra liquid in the bowl over the tops. Mix the brown sugar, ground cinnamon, and remaining orange zest together for the topping. Sprinkle evenly over the tops of the bread cubes in the tins.
    • Bake at 350 degrees Fahrenheit for 30-35 minutes, until the bread cubes are set and the tops are golden brown. Let stand in muffin tin for about 5 minutes before moving to a cooling rack.
    • Sprinkle with powdered sugar or maple syrup if desired, and serve.
    • Store in the fridge for up to 5 days or in the freezer. Warm in the microwave for about 30 seconds before serving.

    Notes

    *Other breads I would recommend: brioche or challah. For gluten-free, use a sturdy French baguette type of gluten-free bread.
