The donuts have a cream cheese frosting, which I could literally eat from the bowl by the spoonful. In fact, I may have done just that, don’t judge! Cream cheese frosting is totally my jam, and if I can squeeze it into my breakfast somehow, I definitely will!

Prep Time:15 minutes
Cook Time:15 minutes
Hands-off time:30 minutes
Total Time:1 hour

Ingredients

  • ½ cup almond milk
  • ½ tbsp white vinegar
  • 2 tbsp butter, melted and cooled
  • 1 egg
  • cup maple syrup
  • ¼ tsp red food coloring
  • 1 cup almond flour
  • ½ cup tapioca starch
  • ¼ cup coconut flour
  • cup cocoa powder
  • ½ tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp salt

Cream Cheese Frosting

  • 4 oz cream cheese, softened to room temperature
  • 2 tbsp butter, softened to room temperature
  • 3 tbsp maple syrup, at room temperature
  • ½ tsp vanilla extract

Instructions

  • Preheat oven to 350°F. Mix the almond milk and white vinegar together and set aside for five minutes. Melt the butter now to let it cool a few minutes. At this time I usually take out my frosting ingredients to let them come to room temperature.
  • In a medium bowl, combine the flours, cocoa powder, baking powder, baking soda, and salt. Whisk together.
  • In a small bowl, combine the almond milk/vinegar mixture, melted butter, egg, maple syrup, and red food coloring and whisk until well combined. Add the wet ingredients into the bowl with the dry ingredients and whisk just until combined. The batter will be pretty thick.
  • Spray your donut pan with non-stick spray or grease well with butter. Fill the donut cavities with the batter. My donut pan has cavities between full-size donut and mini donut, so it took about 2 tbsp of batter for each cavity. Depending on your donut pan size, it may take more or less and the number of donuts you get may vary.
  • Bake for 10-18 minutes, or until the donuts are set and a toothpick inserted into the center of one comes out clean. My donuts took about 15 minutes, but again it may vary depending on what size pan you have. Start checking around the ten minute mark and then every few minutes to make sure not to over-bake.
  • Once the donuts are baked, remove from the oven and let them sit in the pan for another few minutes. Then overturn the pan on a cooling rack and let the donuts cool completely before frosting.
  • Once the frosting ingredients have softened to room temperature, you can make the frosting. Add all frosting ingredients to a medium bowl and use a hand mixer or whisk to beat them together until smooth. Once the donuts are cool, dip each donut top into the frosting and set it back on the rack. Let the frosting set and enjoy!
  • Store any leftover donuts in the fridge.
