A Simple Lemon Bread Recipe

A simple lemon bread recipe that feels like home! Perfect for sharing with friends, or grabbing a slice to snuggle up with a good book!

Do you have a recipe that just automatically feels like home? For me, it’s a recipe for simple lemon bread.
When I was younger, my mom (or sometimes me!) would make a lemon bread loaf that was so delicious and instantly comforting. I have no idea where that recipe came from, but it was one of those that was written on an index card and put into a little recipe box.
You know the type I am talking about!

Anyways, this lemon bread recipe I am sharing today is based on that memory of making lemon bread when I was younger.
Lemon is one of my favorite flavors, very close up there or maybe even equal to chocolate! And lemon bread in particular is delicious in my opinion.
It’s more a cross between bread and a cake, kind of like a lighter pound cake and kind of not. It’s its own unique thing! There is nothing quite like a good loaf of lemon bread.

You don’t need many ingredients for this lemon bread recipe: butter. sugar, eggs, lemons, flour, baking powder, salt, and milk.
I use almond milk because that is what we keep on hand and I have found the best texture with. But you can use a dairy or other non-dairy milk. Just be aware that heavier milks may create a denser texture in the bread!
You’ll also need a loaf pan- I like an 8×4 one. Darker pans, such as mine, can create a darker outside to the bread.

For lemon bread, I actually prefer a lighter colored loaf pan, just to keep the outside lighter as well. But it doesn’t really matter- just use what you have!
I also like to use a hand mixer for this recipe. I’s not necessary, but I do feel it makes the batter smoother and easier to incorporate everything. Just be sure not to overmix this batter!

This lemon bread recipe is perfect for grabbing a slice, and snuggling up with a cup of tea or iced tea, and a good book!
It’s also a great loaf to share with friends or give as a gift. You could call it an all occasion bread!

Simple Lemon Bread
Ingredients
- 1 stick butter 4 oz., room temperature
- 1 cup sugar
- 2 eggs
- zest and juice of 2 lemons
- 2 cup flour sifted
- 2 tsp baking powder
- 1 tsp salt
- 3/4 cup milk
Instructions
- Preheat oven to 350 degrees.
- Cream the butter and sugar together. Beat in the eggs. Beat in the lemon zest and lemon juice.
- Combine the sifted flour, baking powder, and salt in a separate bowl. Add to the butter mixture alternating with the milk, in two additions, mixing just enough to blend.
- Grease or spray with non stick spray an 8×4 inch loaf pan. Pour the batter into pan. Bake for about 1 hour until a toothpick or knife inserted into the center comes out clean.
- Remove to a cooling rack to let cool before serving.
